Raspberry Easter Egg Cupcakes

Raspberry Easter Egg Cupcakes

Makes: About 24 Cupcakes
Raspberry Cupcakes
1 cup Fresh Raspberries
2/3 cup Milk
3 tablespoons Pure Vanilla Extract
3 cups All Purpose Flour
2 teaspoons Baking Powder
1 teaspoon Salt
1 cup (2 sticks) Unsalted Butter, at Room Temperature
2 cups Sugar
4 Eggs
2 teaspoons Pink Food Coloring (Optional)
Green Grass Buttercream
1 ½ cups (3 Sticks) Unsalted Butter, At Room Temperature
3 cups Confectioners Sugar
Pinch Salt
1 teaspoon Pure Vanilla Extract
2 teaspoons Green Food Coloring
To make the cupcakes, preheat the oven to 350 degrees F.  Place cupcake liners in 2 baking pans; Set aside until needed.
In a food processor, puree the raspberries.  Pour the pureed raspberries into a small bowl, and add the milk and vanilla extract.  Set aside.
In a medium bowl, combine the flour, baking powder, and salt.  Set aside.
In the bowl of a stand mixer, beat the butter and sugar until light and fluffy.  Add the eggs and beat until incorporated.  With the mixer on low speed, gradually add half of the flour mixture.  Once the flour has fully mixed in, beat in milk mixture.  Then gradually add in the remaining flour and mix until fully incorporated.  Mix in the pink food coloring, if using.
Using an ice cream scoop, divide the batter among the cupcake liners.  Bake the cupcakes until a toothpick inserted into the center comes out clean, about 20-25 minutes.  Let the cupcakes cool in the pan for 2 minutes and then transfer to a cooling rack to cool completely.
While the cupcakes are cooling, make the buttercream.  Cream the butter in the bowl of stand mixer fitted with the whisk attachment until light and fluffy, about 5 minutes.
Add the confectioners sugar and salt and mix (gradually increasing in speed) until the sugar is fully incorporated, about 5 minutes.  You may need to stop the mixer and scrape down the sides of the bowl a couple times.
Add the vanilla and whisk until the mixture is light and fluffy, about 3 minutes.  Once the buttercream is creamy and airy, the buttercream is done!  To color the buttercream, add the green food coloring to the frosting.  Mix until the food coloring has colored all of the frosting and no white is showing.
Place the buttercream in a piping bag fitted with a Grass Tip.  To frost the cupcakes, hold the piping bag right over the cupcake (no more than ¼ inch away).  Lightly apply pressure to release the frosting to create “grass”.  Pull away and release pressure from the piping bag.  Continue this process until you covered the entire top surface of the cupcake.
Place 3 Cadbury Eggs in the center of each cupcake.  Serve and enjoy!
These last up to 5 days in a sealed container.

The Baby Shower

A couple of months ago I had asked for your vote on which baby shower theme I should use to inspire the shower I was planning for my dear friend. At the time I did not know the gender of the baby and am happy to report that she had an adorable baby boy named Liam at the beginning of February.

By time the baby shower was held a few weeks ago the theme of spring and Easter had started to appear. So in the end there was a combination of the “Baby Bird Theme” and an “Easter Spring Theme”, these two inspirations came together beautifully.

This was my actual inspiration and the one that got the most votes: Baby Bird Shower

This was the actual shower for baby Liam:

The food table was adorned with a cut-up blue paper birds and a spring easter centerpiece with colored decor eggs, blue paper birds, and pussy willows all in a green basket.

I stained each wood letter with brown shoe polish; this was fast and easy and gave it a nice, natural finish look.

When I was down in California last year visiting my aunt, she showed me how to make handmade flowers to go in your hair. They were really easy to make and I got many compliments from my friends.

I love flowers in hair, it is so romantic. They make beautiful accessories for Bridesmaids on the wedding day or even just a gift from the bride to her Bridesmaids.

PBJ Brought To A Whole New Level

Growing up I loved peanut butter and jelly sandwiches. They were my go-to for lunch and they still are to this day.

You can imagine how excited I was when I come across this recipe. A PBJ cookie with chocolate, an oreo cookie, and marshmallows in it?!! Could it get any better?

PB&J Marshmallow Oreo Stuffed Cookies

1 cup peanut butter
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup packed brown sugar
2 eggs
1 tbsp vanilla extract
1 1/4 cups (150 grams) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup Jet Puffed Mallow Bits
1 bag milk chocolate or raspberry M&Ms
1 pkg Berry Burst Ice Cream Oreos

1. Preheat oven to 350 degrees F. Spray a standard size muffin tin with cooking spray. Beat peanut butter, butter, and sugars together on medium speed until light and fluffy, about 3-5 minutes. Add eggs and vanilla and beat until well combined. Meanwhile, whisk together flour, baking powder and salt, then add to wet ingredients and beat on low speed until just combined. Stir in marshmallows.

2. Add 5-6 M&Ms to the bottom of prepared muffin tin. Add a scoop of cookie dough, one Oreo, another scoop of cookie dough and press down to flatten. Top with 5-6 more M&Ms.

3. Bake at 350 for 15-18 minutes, or until the edges of the cookie just start to turn brown.

Makes 16 cookies.

Since it is Valentines Day this week, I started to ask myself would I prefer getting chocolate or red roses? Red roses are said to be the most romantic flower because they mean passionate love. Below are what the other colours mean.

A Valentine’s Treat

So Valentines Day is coming up. I am not going to lie, it is not my favorite holiday. All this celebration on love on this one day. Really, we should celebrate love every day of the year! What can I say, I am a hopeless romantic. Also I should not have an excuse like Valentines Day to eat this heart shaped dessert pizza.

Looks Too Good to Eat (but I still will)

Cupcakes have swept the nation. Cupcake shops have been popping up in towns and cities, people make trips to purchase a cupcake that are beautifully frosted and perfectly moist.

There has been shows on food networks such as Cupcake Wars where cupcake shop owners compete with each other for a prize of $10,000 and to showcase their cupcakes at a winning gig.

More importantly they are a perfect party treat. Not only do they look pretty but are tasty. In most cases they look too good to eat, but that does not stop me.
